Social Exhibition Food Local caterers should adopt innovative ways of cooking- Katumi-Maddah

Winneba (C/R), Nov. 12, GNA – Head of the Food and Nutrition’s Unit of the Home Economics Department of the University of Education, Winneba, ha= s asked players in the hospitality industry to adopt innovative ways to market their services. Madam Comfort Katumi-Maddah, charged hoteliers and caterers to tap t= he expertise of the department to showcase to the citizenry the variety of dishes obtained from local food commodities. He was speaking at an exhibition of local food recipe and dishes in Winneba in the Central Region, as part of the end of the first semester examinations of final year students drawn from the 10 Regions to display their talents in food production development. She said her outfit is poised to market the department to business enterprises in the country through regular experimentation and exhibition= of local food recipe and dishes. Dr Phyllis Foster, Head of Department advised Ghanaians to polish lo= cal dishes to make them look attractive. They should also consume the dishes in order to derive the high nutritional values they contain to prolong their life span. She said the department is poised to educate the society on food security and food sufficiency and appealed to public-spirited individuals=

and organisations for financial assistance to make the dream possible. Mr Guy Eshun, a lecturer in charge of Food and Nutrition at the university said in an interview that the department will train students t= o be self-sufficient to set up their own businesses. He said the department is beset with a number of challenges especial= ly the lack of equipment for practical work and appealed to the university authorities to salvage the situation. Professor Kwaku Amedekeh, Dean of the faculty, tasked the department= to design fliers to afford second cycle institutions the opportunity to try their hands on the recipe the outfit had developed.
